For when you have an Olive Tree
Rinse Well
- Put olives in drainable vessel
- Fill with water (rainwater preferred)
- Drain
- Repeat daily for 14 days
Set & Forget (in Brine)
- Choose storage vessels
- Fill 1/3 of storage vessel with 1:10 salt to water ratio (use some of water to dissolve salt)
- Store in dark place (e.g. dark cupboard)
To Taste
- Empty brine
- Add olive oil or 50:50 vinegar/water or new brine
- Taste after 2 months (average time in brine – 4 months to year)
