For when you have an Olive Tree

Rinse Well

  1. Put olives in drainable vessel
  2. Fill with water (rainwater preferred)
  3. Drain
  4. Repeat daily for 14 days

Set & Forget (in Brine)

  1. Choose storage vessels
  2. Fill 1/3 of storage vessel with 1:10 salt to water ratio (use some of water to dissolve salt)
  3. Store in dark place (e.g. dark cupboard)

To Taste

  1. Empty brine
  2. Add olive oil or 50:50 vinegar/water or new brine
  3. Taste after 2 months (average time in brine – 4 months to year)
